Oh yes we still eat Pizza! I am married to a professional musician! Pizza is in his soul! Since I am not a Celiac patient, I can eat gluten, I just try to eat other things most of the time. I find the Tandoori style flat bread known as Naan to be the perfect small serving size. This is far healthier than the heavy mega-greasy delivery pizza! Naan which is small, thin and light, and also comes in whole grain varieties. This style of pizza keeps you from loading up on too many carbs and gluten, while still enjoying a familiar favorite. Just be sure to source fresh organic ingredients for your toppings.
We usually have a Naan Pizza dinner once a week. It has become the running joke that if it's Monday, it must be pizza! Seems it's the easiest way for me to get back into the dinner routine, after a weekend of activities. Ben is always very happy to oblige my quick fix for dinner. We keep packages of whole grain Naan in the freezer at all times!
I am going to show you two versions of Naan pizza, because Naan is a great delivery system for whatever you have in your pantry. You can try a little olive oil on the crust, or a pesto mix, standard tomato sauce, a vegan nut mix, a bean taco style mixture, or add some bruschetta. You can put vegetables like peppers, broccoli, asparagus, artichokes, or avocado as a topping. If you have some pastured chicken, or organic pastured no nitrate lunch meat you can add that as well. It is just one of those anything goes productions! For cheese use organic mozzarella, Parmesan, organic cheddar, or vegan no soy daiya cheese. Or all four! It's your Naan Pizza, so do what you like! These two pizzas are just an example of what drool worthy pizza looks like when you are making better pizza choices. I think you can handle this! We do!
Caramelized Onion And Tomato Naan Pizza
1 pkg Naan
4 Tbs organic tomato sauce
Onions you have already caramelized in pan
Sliced Roma Tomato
Fresh Ball of Organic Mozzarella Cheese
Fresh Parmesan Cheese shredded
Hemp Seeds
Basil and Oregano
2 Tbs organic olive oil
Lay Naan on baking sheet and rub with olive oil. Prepare onions in a pan by sauteing till browned. Slice more onions than you need, because they will shrink down. Spread 2 Tbs organic tomato sauce on each Naan. Cut thick slices from your mozzarella ball. (I used Blue Ridge Dairy Farms fresh mozzarella in water, that we had purchased from Arganica.) Arrange mozzarella slices across each Naan to your liking. Place slices of Roma tomatoes on the mozzarella and evenly spread your onions. Add Parmesan shreds, hemp seeds, and spices. Place Naan Pizza in 400 degree pre-heated oven and cook for 10 minutes. Gorgeous! Serve with fresh salad greens, and homemade veggi juice!
Salmon Pesto Naan Pizza
1 Pkg whole grain Naan
Enough pesto mix to smear across Naan
1 can sustainably caught Wild Alaskan Salmon
Thin cut organic onion slices
Organic Cherry tomatoes sliced in half
Organic Shredded Mozzarella
Herbs De Provence
2 tbs organic olive oil
Place Naan on baking sheet, and rub the side that is facing up with oil. Spread pesto on Naan. Evenly space out chunks of salmon across both pieces of Naan. Add onion and tomato pieces. Sprinkle with shredded mozzarella and spices.
Cook in 400 degree pre-heated oven for 10 minutes.
Slice
and serve with a salad, and homemade green juice. You can see how thin
the crust is in this photo and that you are really not getting too many carbs. We
usually have 2 or three slices for our serving. Leftovers are the next
day's lunch treat! Yum!
